Confetti Cat Cupcakes!

I love how simple these cat cupcakes can be to make! Great for beginners to get a feel for fondant. It’s like playing with play-dough, but you can eat it!

Play around with your cat’s features and even make a collar (I wish I would have done that myself.) I just love my cats, and I love cupcakes, and I thought this would cheer me up after the election blues.

For the cupcakes you will need:

(Dry Ingredients)

2 sticks butter

3 C cake flour

2 C sugar

1 1/2 Tbsp baking powder

1/2 tsp baking soda

(Wet Ingredients)

4 eggs

1 3/4 C buttermilk

2 Tbsp vanilla

1 C sprinkles 

Let’s get started!

Preheat oven to 350

1.Mix together the (Dry Ingredients) until the mixture resembles wet sand.

2.Mix (Wet Ingredients) together in a medium bowl.

3.Add half of the wet ingredients to the dry and mix on medium speed for 2 minutes.

4.Add the rest of the wet ingredients slowly – mix for another minute until well mixed.

5.Fold in the sprinkles

Bake for about 25 minutes until cake springs back.

dsc00879For the Cat toppers you will need:

Tinted fondant in the color of your cat’s features (I used Wilton’s assorted colors )

Edible glue or water

Food-safe paintbrushes

Small ball tool

Fondant smoother

Fondant roller

Circle cookie cutter

Meow, it’s time to make your kitties!

1.Roll out your fondant and use the circle cookie cutter – attach to the top of your cupcake with water or edible glue – smooth edges with smoother.

2.To make your kitty cat’s head, begin with a small ball of your cats color fondant. Use water or edible glue to attach two smaller balls of the color of the whisker cheeks fondant. Use a toothpick to poke little freckles on the whisker cheeks.

3.Indent the eye sockets with a small ball tool and attach the eye color fondant inside of them using a little water or edible glue.  For the nose, shape a bit of pink fondant into a triangle and attach it to the top center of the whisker cheeks.

4.Finally, to create the ears, roll out two small balls of fondant, flatten them and then lightly pinch to create tiny triangular shapes. Attach using a little dab of water or edible glue.

Attach your cat’s head to your cupcake with water or edible glue.

Add some cute paws, and then you’re done!
